I'm equally sure that Kay is not vegan...what I've discovered, watching friends and family dedicate their life to one diet or another, is that many things can be "counterfeited" but often, at a cost, in terms of taste and texture. A "brioche-type" enriched bread, like challah, tastes rich because it's enriched; eggs are a lovely protein, and "richness-developer". I make the most beautiful pastry; people remark on it, enjoy it; my butter tarts are hugely bid up at auctions because of it. It is made with lard, and nothing else is quite as magical...
