I bought a big pork loin roast, and cup it up into a number of meal-size pieces and put it in the freezer.
Tonight, I made a porkloin roast with dijon mustard & thyme glaze from one of those pieces. It was fine, as in yummy.
There was enough left for another meal -- probably refried rice with pork - so I think I need to rethink the sizes, and be willing to make it smaller.
Also made my son his favourite -- scalloped potatoes -- and for my husband - apple crisp.
Lots of good warm oven cooking, plus of course, raw greens, salad, and cooked veggies.
One store which is normally out of our way had a great deal on sausages, and husband happened to be going right past it when visiting his brother, so, he picked up enough to freeze for 6 meals.
I often think of
@Seeler 's cooking thread, and the lessons she gave us all.
I am sure what I am cooking now is much more nutritious than what we ate before.
I am enjoying cooking and baking and slowly am using up material that had been in the house.
Fridge and cupboards have a lot more room when you make things from scratch.
I am also mindful of
@BetteTheRed 's mentioning that buying in bulk is not something everyone can do for various reasons. Nor does everyone have the time or capability to use something like the flipp app to keep an eye out for specials in their grocery items.
