I am very fond of Scottish bagpipes, but I am actually kind of in love with Irish Uilleann pipes right now. They're a bit subtler than the Scottish pipes. The Finnish metal band Nightwish has an English musician on its roster who plays them and they have been using them to great effect since he started working with them c. 2010.

The Irish Uilleann pipes are lovely too

I've never done it, but I always worry about having left the windows down and it raining
