Gluten Free, Lactose Free Cake?

I am looking for a recipe for a gluten free, lactose free cake. I’m hoping to bake one for a friend’s birthday in September and was thinking I should maybe do a trial run first.

I have a “go to” vanilla cake recipe I use so if anyone knows how to properly convert recipes, that would also help (I assuming I can’t do a direct swap?)
 
You can swap the flour for a good quality gluten free mixture, usually just one to one, volume, not weight.

If your recipe calls for milk, sub in a nut/oat milk.

Fat is a bit more difficult, because it depends what kind of fat you're subbing for, and how it's going to be treated. If your recipe calls for you to whip the butter until smooth, you can't use oil. You'll need a solid fat, at least.

Straight conversions are a bit iffy in my experience. I have some recipes that might work for you. Are you specifically looking for a vanilla cake?

I was thinking vanilla so I can do a raspberry filling but I am open to other options!

What's the requirement for 'lactose free'? No milk? No butter?
Most people who are lactose intolerant are fine with milk used in baking. It would be more like skip a cream cheese frosting.
 
You can buy gluten free cake mix - Loblaws carries some, Metro too I think. They are of course at least twice the price of regular cake mixes! I have a book called The Cake Mix Doctor Bakes Gluten Free by Ann Byrn- she starts with gf cake mix & adds stuff to it. She usually has notes in it re making it dairy free also - which is helpful. (If you wish, I can photograph & send you a recipe - yellow birthday cake, or bride's cake which has more layers & rasp preserves between some layers, fresh rasp on top). I looked but didn't see the recipes online.

I’m not 100% sure his tolerance level so if I’m giving it to him for a birthday I’d rather not chance it! He is more tolerant of dairy than gluten though.

If it's just normal lactose intolerance skipping the milk in a cake would be playing it safe. The butter would be fine, it's already low in lactose.
