Yes, -40 without wind is a lot easier to take than a -40 windchillWind chill is the worst.

Which is what I would have done if I hadn't been following the recipe I was givenAgreed re no-knead bread. It takes such a long time to rise, and the dough is so wet, that it softens/dissolves the parchment paper if you used it early in the process. What you do with those is put them, well floured, on the parchment paper at the last second, basically just using it to convey your dough quickly to a preheated clay baker.
