Vegetables: Love them or hate them?

I'm working on introducing more vegetables into our meals. We had fallen into a lazy pattern of potatoes / pasta and the veggie was frequently frozen corn. (i know, i know).
With the abundance of veggies at the market, and with more time on my hands, I am reintroducing plentiful veggies to our meals and snacks.

I'm curious, do you love vegetables or hate them or just can't be bothered.

Some of the reasons for the different approaches in our family was made apparent when I read the book Acquired Tastes subtitled Why Families Eat the Way They Do which was co-written by the spouse of one of our wondercafe friends.

It enlightened me into why my spouses and my approaches to food / cooking were so different. My formative years were with a stay at home Mom who made everything from scratch and a Dad who always had a garden, shopped at farms. We had a root cellar and a huge freezer. My husband's mother was widowed with 4 small children. She went to work each day, and their meals were quite different from ours.

I'm curious what others experiences are.

Do you eat a lot of vegetables?
Do you have a variety of them?
Have you found any vegetables that you enjoy recently?
 
I was surprised that my b-i-l and s-i-l had never had a kohlrabi. My Dad got a passion for them when I was in my teens, so they were a frequent addition to the menu when they came out of the garden.

I am happy that beets are now in the market. I cook up a batch then put them in the fridge. Easy addition to a meal.
Cauliflower as well is gorgeous right now. Raw cauliflower is one of my favourite munchies.
 
I had a whack of new veggies injected into my diet when I started up with Mrs. M. Marrying into another culture does that to you. Bok choy, yu choy, nappa, mishi (not sure if that's right but it's phonetically right), and some I don't even have a real name for. There's one's that basically chrysanthemum leaves that we had for dinner a couple days ago. Definitely upped my veggie game. Haven't had any new ones in a while, though. Not sure there's much left to try in either my or her culture.

My wife stir fries cauliflower florets with mushrooms, either white or shitake. Yum.

Which is a Japanese preparation for soybeans. I've had them at Japanese restaurants. The idea of them as a spread sounds interesting. Needless to say, the Chinese do interesting things with soybeans, too.

Neither love nor hate them. They just are. I prefer fresh veggies in green salads but I’ll eat any. I’ve had vegetarian periods where I had to get more creative with veggies but I’m not at the moment.
 
We cooked brisket today and I made a lovely ratatouille to go with it. Fresh thyme and basil from mine and the church's gardens, zucchini, onion, garlic from the rose garden, bell peppers, oriental eggplants, salt pepper lemon zest and a big glug of balsamic. Lots of EVO.

By gods that man hates a lot of stuff while declaring a great love of everything as an ideal ... and there something was displaced!

The word does say to dispose of ideals ... thus the light fades to a lighter shade that rises and is lost behind the hills as they go purple at the end ...

Is this explainable? There 'lle be no end to it ... the stacks are loaded ... thus the rise of Venus, Dianna, Athena ... or Afro Ditty by what ever name ... an item that will cause many men conflicts! Can an abstract become a confliction ... and thus darken history ... as a martyr? Kush for no reason atoll ... isolated and autonomous as attempting to become auto crates ... thus off to dah Boies with M by all means!

Water closet or wardrobe for thought ... instead of a room it just wraps itself up ... that's coven in the beginning ... ante 'd up rise'n from know where? No ...

Is "no" an enigma being contrary to "one" that positively wills ... furthers dissonance and makes the entire thing go round ... but still remaining the base MS Understood!

We remain detracted as we look up at night ... when you know something is deficient ... the autosomes without clues? It just doesn't add up ... love-hate and the raisin game ... dissonance?

Isn't ratatouille just a myth that you can make something of as if cooked-up? May explain buns and havens ... with folk hovering about ... primarily the smell ...

You nose there's got to be a story buried there ... Pinocchio? What's an Ochoa ... (Castilianized form of Otxoa, from the Basque personal name Otxoa, an equivalent of Latin Lupus 'wolf')

It is said there is an answer there in the "ground of being" if you dig it ... is the ground of being a fixed, or a moving vasal? Are there vascular deficiencies for those standing far too long ... and perhaps relating to Virginia Wolf as unapproachable ... unless domesticated by ridiculous protocol rising to dogma ...

Destructible laws a loss ...

Isn't life a lot like that if you can't derive a decent story, myth, or otherwise item? Exceptional production Eh!

Made sweet potato and black bean burritos for dinner last night. The sweet potato/black bean had a bit of cumin and chili powder. Surprised how yummy it was.

I've heard folk declare they hate left-overs ... maybe why they are permanent right's!

If they lived on them maybe they'd be thankful for such things and hagiography as sainted people that are satisfied ... but can one change a hater's psyche? This defines uncertainty ... for such things are unlikely!

Those firm will deny such things as provocative as they are distraught with the truth ... it causes movement ...
 
Eating leftovers today

We try hard not to waste food. I incorporate previous day's meals into future ones. So we had chicken drumsticks last night, two leftover, pork shnitzel tonight, two leftover, just brought up 2 smoked sausages from the freezer, and there are frozen shrimp there. Tomorrow night: jambalaya. Stuffed peppers turn into chili or spaghetti sauce. Sometimes when I say grace at dinner, I am reminded of the minister whose Monday grace referred to re-blessing this food, lol.
