What does it taste like? I imagine it being very bitter

like greens 
I add a bit of lemon juice to counter some of the bitterness and also use younger/smaller greens so less bitter. As I am using it as a base, there isn't a huge strong flavour in the resulting dish. Now, the tea, that's a different story, and depends on whether I use just petals or the whole plant - I add a little lemon and honey to it. I also will toss dandelion flowers and baby leaves into smoothies
