I used to love Londons Balloon Fest, but I guess that is no more.
It died a long time ago. Swelling insurance costs after 9-11 killed it and the air show. The air show has been back for 3 or 4 years now, even developing a "drive-in" format to allow them to run during the pandemic (basically you pay for a parking spot and watch from there) but Balloonfest seems to be gone for good. We don't even get many hot air balloons around here any more. They used to be a summer staple in London.

Too bad, they had great bands there too.
 
Please remember that edible does not necessarily equal tasty.

I have a (slightly odd) friend who really likes garlic mustard. Now, I'm not afraid of fresh/wild greens, one of my favorites being the very first nettle shoots, but garlic mustard is, to put it plainly, awful. And I ate it when young/hadn't flowered, etc. Yuck.
 
Another slightly more edible invasive weed is goutweed. I'd eat it as a green if my choice in the grocery store were nasty in quality, or limited to collard greens (of which I am not really fond).
 
Might be worth a try, if you like greens in a vegetable soup, or eat beans and greens (one of my go-to dishes). Don't bother after it's gone to flower; it will be nasty.
 
I'm going to have to see if I have goutweed...I might, but not sure.

@KayTheCurler the info I found said to harvest the quack grass roots in the fall to dry and grind up for a coffee substitute (if you roast it first) or flour...in the spring (or when new shoots appear) it can be eaten fresh in salads...otherwise, it should be juiced...I don't have a juicer but thought I'd try boiling and straining the liquid off and see how it goes for an experiment.
