Like many things, it's a matter of taste. I prefer a good mustard (or even a so-so one) or BBQ sauce on dogs. Chopped raw or fried onions are good, too. But never been a fan of ketchup.

On my hotdog I like just bacon, aged Canadian cheddar, and sweet relish. On a top-sliced bun.
But what determinez taste? Yeobo lovez spicy food. I can't eat it at all. And while I like ketchup on friez, eggz, and grilled cheezuz, I can't stand the stuff on hotdogz
How we grow up is a big part of it.
Given the choice, my wife will always take Chinese over anything Western. My d-i-l has tastes probably similar to your Yeobo, likes things very very spicy. Her family are from Pakistan originally and she grew up on South Asian cuisine which tends to be very spicy.
Another example. I love maple syrup. My wife is fine with just "pancake syrup" or similar. She didn't grow up in the heart of maple syrup country, though. We used to buy it in 1 or 2 litre cans of it at the local farmer's market when I was a kid.
Now, epigenetics would suggest that those learned experiences can end up coded into genes so your Yeobo and my d-i-l might literally have genes that make them more receptive to spicy food. But it does seem to start with experiences.
