My mother made soup cake. It used a can of Campbell's tomato soup, raisins, and spices similar to spice cake. It was moist and not as crumbly as most cakes.

I have heard of this cake but never experienced it.

It was probably from a recipe in a pamphlet produced by Campbell's to expand the use of their products like porkchops cooked in mushroom soup. I do not have her recipe for tomato soup cake.

I've actually used cream of mushroom more as an ingredient than as a soup, I think. I'm not fond of it on its own.

There's an urban myth that tomato soup cake was the original "red velvet cake."

Some bakers put grated beet into cake to make "red velvet" cake, but most people just use red food colouring.

Tomato soup cake with cream cheese frosting does look and taste a lot like red velvet cake.
(I'd say let's try experimenting baking with tomato soup during the next lockdown, but I really hope there is no next lockdown.)
