A question from one of my last EFL classes yesterday - since Americans use the phrase "catching zees," should we Canadians instead say "catching zeds"

Technically, yes we should as we pronounce it zed not zee. That said, as it's a "saying" we do tend to use zee not zed.
Yeah, "zeds" sounds kind of weird in that context, eh. Emily Zarka, a YouTuber and university professor I follow, sometimes goes by Dr. Z and I'd pronounce that as "Dr. Zee", too. Dr. Zed sounds odd to my ear (also, she's American so 'zee' is how she would say it).

When I was young there used to be a Dr. Zed (spelt that way) in a kid's magazine (Owl? Something else?) :)

I went to college with a woman whose first name was Anna and whose last name started with Z. On-air she always went by "Anna Zee." She was working in Kingston last I heard

That Zed or as you sayed it ... let us rest and read into the depth of the abstract that isn't terribly active at either end ... but in the midst of the go round !

Reminds me of a whirl a gig ... or dervish! Something blowing in the head ... innate wind ...

I had a subscription to Owl. I think it was supposed to make me smarter. I don't think it took.

The great Zed is a Zee, as black as anything we could slip into to stop the evils we've encountered ... it is humbling! Isn't Z an integral sign where one encounters everything unknown ? Perhaps just another despised thought along with the knowledge and wisdom of all that is afore us as a given ... what a grace said George ... the grasp slipped by!
